A simple and easy recipe to celebrate a special day

Ingredients :
Cake :
3 eggs
3 table spoons of water
90g sugar
60g cornstarch
60g flour
1tea spoon backing soda
Cream:
1 box of organic cream cheese
1 box of organic sweet condensed milk
1 box of mascarpone
2 bags of organic frozen raspberries ( or other fruit of your choice)
Preparation:
1. The night before, take the fruit out of the freezer and let it thaw in a bowl in the fridge for the night
2. In a mixer mix the eggs with the sugar and the water. Mix for 10 minutes, it will make a beautiful white foam.
3. Fold in gently the flour, corn starch and baking soda, just mix to combine the ingredients.
4. Pour the mixture in a buttered and floured mold ( round 26 cm) bake for 15 minutes at 350F ( 180 degrees C) .
5. When you take it out of the oven let it cool down then split the cake in two discs. On the lower one spread the fruit and it’s juice that was on the fridge since the night before.
6. Now make the cream: mix the cream cheese with the condensed milk and the mascarpone into a white cream ( you can add vanilla beans to it)
7. Add some of this mixture to the center of your cake and use the rest to cover it.
8. Leave in the fridge until serving.
9. Add birthday candles and enjoy 🙂
